Who doesn’t like chocolate Cookies and who doesn’t like Brownies? And how about if combine both of them? These brownie-like cookie brings best of both world together, shiny crunchy tops and chewy fudgy soft centers. These cookies are what every chocolate lovers dreams are made off.
In a bowl, whisk together flour, baking powder and salt.
Put butter and chocolate in a heat-proof bowl and microwave in 30-second increments, stirring between each increment, until melted. Do not overheat.
In a bowl, beat eggs, brown sugar, and vanilla on high speed until light and fluffy.
Beat in melted chocolate on a low speed.
Mix in flour mixture just until combined.
Place the batter in the fridge for 30-60 minutes until it firms up a bit.
Place scoops of dough 2 to 3 inches apart onto baking sheets.
Bake until cookies are shiny and crackly yet soft in centers, about 9 to 12 minutes.
Cool on baking sheets for 10 minutes.
Transfer to a wire rack to cool completely.
Store in airtight container.
