Mole is the generic name for a number of sauces originally used in Mexican cuisine, as well as for dishes based on these sauces.
What makes Mole,the signature sauce of Mexico special and different is the addition of chocolate which gives it a dark brown color and a bitter sweet smooth gravy.
Traditional mole usually requires a pantry’s worth of ingredients and an entire day in the kitchen.
My recipe can’t be called “Traditional” or “authentic” I have substituted many of the ingredients according to what I had available at home,plus you won’t have to slog the entire day in the kitchen but trust me that doesn’t compromise on the flavors. You will be surprised how amazingly the chocolate works in this sauce and pair it up with the Mexican Style tomato rice or tortilla and you are in heaven.
