Frogeye salad (alt. Frog-eye salad, Frog’s eye salad) an American classic is a type of fruit salad.It is made with acini di pepe pasta, whipped topping and egg yolks. Fruit, such as mandarin oranges and pineapples, are often mixed in, and it is sometimes topped with marshmallows.
We had this fruit salad fist time in a pot luck party and loved it. We took this salad to a family dinner and everyone loved it.

Cook the Acini De Pepe pasta/Couscous according to package directions. When done, rinse under cold water in strainer. Let cool.
In a saucepan over medium high heat combine pineapple juice, sugar, flour, salt and egg. Cook and stir constantly until mixture thickens and is smooth.
Remove from heat and stir in lemon juice. Let cool.
In a large mixing bowl combine the pasta and thickened mixture.
Gently fold in the mandarin oranges, crushed pineapple, pineapple tidbits, marshmallows. Fold in cool whip. Refrigerate until serving.
