Hunkar begendi, Hünkârbeğendi, or simply beğendi, is an Ottoman cuisine dish. It is made from smoked and spiced eggplant, which is grilled, then pureed, and stirred with milk, melted butter and roasted flour.Which literally translates to Sultan’s delight. You can also try the recipe with chicken.
We tried the recipe at a tapas restaurant and fell in love with it. I started to look for the recipe and was pleased to discover that I could make it with the ingredients available in my kitchen. This dish is perfect for Indian palate.
The original recipe requires a special Turkish hard mature cheese (kasar) or kashkaval cheese but I used a mixture of Parmesan and white cheddar cheese and I think it worked well. You can have it as is but it also goes well bread or naan.

I really want to make this. Instructions say “pressure cooker”, but it doesn’t have me close it and pressure cook. Correct?

Apologies for not being clear. Yes, you’d want to close the lid on the pressure cooker to cook it quicker. You can even replace pressure cooker with a slow cooker or crock pot if you have the time. 🙂 The time in slow cooker will be much more. Approx 3-6 hours (depending on how you want to meat) for the meat to get tender.
