Spinach rice is is an easy and healthy one pot meal. In this pulao you can add your choice of mixed veggies, but I made it with only spinach and no veggie. Otherwise you can add green peas, carrots and potatoes. You can also add pan fried paneer or fried onions to the pulao, while serving. I like this rice dish as it’s quick easy and something that we don’t cook on regular basis.
