I love the complimentary breads that you get in restaurants while waiting for your food to arrive. Some places become more famous for those complimentary breads than their actual food, example : Red lobster’s cheddar biscuits, olive gardens bread sticks, etc. My recipe is inspired by olive garden’s bread sticks. My husband loves fresh rosemary and I love garlic so I combined the two to come up with my signature bread.
In a bowl add warm water along with yeast and 1 tsp sugar.Dissolve the sugar. Let it sit for few minutes until yeast gets activated.
Add remaining sugar, 1 cup of flour,3 tbsp of oil, salt to taste, grate in 1 clove of garlic, add chopped rosemary and mix well.
Now add the remaining 1/2 cup of flour and mix again. Knead until it starts to pull away from the sides of the bowl but is still a bit sticky.(Note:the dough should be soft)
Coat the bowl with oil and cover. Let it rise for about 2-3 hours until double.
Now break into 2 oz balls. Dust a clean surface with some all purpose flour to prevent sticking and roll one by one each ball into a long cylindrical ropes.
Place them on a parchment paper lined baking sheet. Cover and let it rise for another hour.
After the rising period, preheat oven to 425F. Place the uncovered baking sheet in hot oven and bake for 10-12 minutes. (Note:To give them a beautiful golden top,you can brush it with milk).
Pull bread-sticks out of the oven and immediately rub with melted herb butter.(my herb butter contained salt,pepper,chopped parsley and cilantro)
Serve hot.
