To be honest I am not a huge fan of tofu. Many people say that tofu is like the Indian cheese-paneer and I don’t agree with that, at all. Unlike paneer tofu doesn’t really soak the flavors and thus always taste like taste less sponge. But my dislike for tofu stopped when I tried silken/soft tofu. Unlike the firm tofu silken tofu is melt in your mouth soft and smooth and I love it.
I have used dried anchovies but you can use any dried fish or if you are vegetarian then you can completely skip them but they take the tofu to the next level. Hiyayakko is a quintessential summer dish in Japan.
